This isn’t one of the most creative recipes I’ve shared, but the lack of prep, cook time, and clean up involved makes it worth sharing! We have been SO busy lately between building our businesses and wedding planning! It’s nice to have quick go-to recipes on hand.
The best part is you can always swap your vegetables and seasonings so you don’t get bored! I’m always switching vegetables depending on what I have on hand. You can also use turkey breast, tofu or tempeh to experiment with your protein!
For a heartier meal it pairs really well on a bed of quinoa, rice, cauliflower rice, lentils, or greens!
Ingredients:
Vegetables of your choosing (4-6 cups total)
Protein of your choosing (1-1.5 lb.)
Marinade/sauce/spices of your choosing
*Some of my favorite flavor profiles:
- Olive Oil, Rosemary, Lemon Juice, Salt & Pepper
- Coconut Oil, Cumin, Paprika, Lime, Salt & Pepper
- Olive Oil, Crushed tomatoes, Italian Herbs, Salt & Pepper
To save even more time, you can choose a store bought sauce. Primal Kitchen has some awesome flavors without using cheap oils or excess sugar!
Instructions:
Step One: Preheat oven to 400 degrees
Step Two: Line a baking pan with six 12″ pieces of aluminum foil
Step Three: Slice your veggies and put them all in a large mixing bowl

Step Four: Dice the chicken (or protein of your choosing) into 1 inch cubes and add to the bowl
Step Five: Add your sauce/marinade/spices to the bowl and mix well!

Step 6: Transfer the meat and veggies to your aluminum foil squares on the baking pan.
Step 7: Fold the aluminum foil into packets and pop in the oven for 20 mins or until chicken is cooked through!
Step 8: Take out of the oven and enjoy!

That’s it! Clean up is a breeze and you have plenty of yummy, healthy food ready to go!

**Side note: Trader Joes, Whole Foods, Publix, and Sprouts all carry recycled material aluminum foil if that sorta thing is important to you! 🙂
