…YOU MUST MAKE THESE!
This dessert is everything a dessert should be. A little sweet, a little salty, a little gooey, and a little creamy. But the best part?! Dairy free, sugar free, and gluten free! And with only 6 ingredients, it’s SO easy to make!
The key ingredient in these delicious little snacks is the tahini. Tahini has a consistency similar to nut butters. It’s made from ground sesame seeds so its rich in minerals such as phosphorus, magnesium, and potassium. It’s also a higher protein source than most nuts and high in healthy fats!
So here’s how to make them!
2/3 cup tahini
1/2 cup melted coconut oil
1 tbs pure maple syrup
2 tsp vanilla
1 cup packed, pitted dates
First boil a pot of water, throw in the dates, and let soak in the boiling water for ten minutes.
While they’re soaking, mix together the tahini, melted coconut oil, vanilla, and maple syrup in a bowl.
Line a muffin tray with cupcake liners and fill the bottom of the cups with your mix (a little more than a tbs.) Place the muffin tray in the freezer for 5-10 mins to set.
Strain the dates from the boiling water and move to a blender with sea salt until it is a smooth, paste-like consistency.
Spoon the date mixture over your hardened tahini layer and then pour the remaining tahini mix over top. Sprinkle sea salt on top. I topped some with almonds for funzies.
Place back in the freezer until hardened (about 30 mins)
