Ok, so this is a super quick and easy recipe! When I’m short on time or don’t know what to make, this is a go-to!
Mashed sweet potatoes act as the binding ingredient so you can perfectly and easily shape round meatballs. The addition of rosemary is really a beautiful compliment! It smells delicious, makes it taste.. sophisticated?, and actually offers some health benefits like better digestion and protection against possible carcinogens produced while cooking meat at high temps.
Ingredients:
1 large sweet potato
2 tbs chopped rosemary
1 lbs lean ground turkey
1/4 cup finely diced onion (optional)
salt and Pepper
crushed red pepper
Let’s get started!
Preheat oven to 375 degrees**
First, peel and dice your sweet potato and throw them into a pot of water on the stove with cover. Once the water comes to a boil, let it simmer for 15-20 mins. (To save time, you can place the diced sweet potato in a bowl, cover with a wet cloth, and stick in the microwave for 5-6 mins) Then transfer to a large mixing bowl..
Then chop up some fresh rosemary and onion
Add 1lb of fresh, lean ground turkey to the mixing bowl as well the rosemary and onion
Add salt, pepper, and crushed red pepper to taste
Mix everything together! I use reusable gloves to be able to mix with my hands and just toss them in dish washer after!
Shape them into 1 inch to meatballs and place in a frying pan with avocado or coconut oil on the stovetop
Cook on med-high heat for 2-3 mins each side to get a nice char for texture!
Transfer the meatballs to a sheet pan sprayed with nonstick spray and place in oven for 12 mins, or until fully cooked. (**This step can technically be skipped as you can continue to cook them on the stovetop until done! I just think they’re juicier finished in the oven! …but when im trying to hussle to make sure I don’t miss the new episode of Shark Tank, I finish it stovetop!)
Then take out, let cool for 5 mins, and enjoy!
Our favorite way to enjoy these are overĀ spaghetti squash and homemade red sauce! This recipe can also be made into burger patties! Tim really loves them drizzled with honey!
